I installed Office `07 shortly after purchasing the AAO and everything worked fine for several month. Then one day I went to open a .doc file and got some kind of error (sorry don't remember what it was). So I figured I would uninstall then reinstall Office to fix but it did not. Office would not uninstall. I deleted everything related to Office I could find (files, registry) and tried to install but just keep getting an error message "Installation could not be completed".

I am afraid that it is a bit late to come with an advice, but may be for next time - do not be so quick and do not start reinstalling and uninstalling etc. just because of one stupid error. There is very often an identifiable reason for an error and very often it is also fixable (besides of the analysis of the problem there is still e.g. restore points option etc.). Your incorrect uninstalling of the application (Office) obviously created some troubles. You have to be sure that registry is clean, what leads me logically, to the assumption, that at the first step you should start with ccleaner or a similar tool to be sure that there are no remains of the application in the registry.

I have used ccleaner, but the problem persists.

There is a "change / repair" option short of uninstalling, and I've used it successfully with my older Office version. I jetted to the MS help site, assuming you've been there, but might have missed this note:
