It will run like crap do to the need to share RAM among to OS's. Also don't expect Aero or anything flashy when you have to share 8MB of video RAM.

I've got Win 7 set up in Virtualbox on a Win XP Pro SP3 host. How do I set up 1024 x 600 resolution? Current options seem only to allow 800 x 600 or 1024 x 768?

I think you should install the equivalent to the VM additions that are for Virtual PC. I am not sure if VirtualBox has them or what they are called but its basically a set of drivers optimized for the VM. If you are using hardware virtualization instead, you may need to install the drivers of your synthetic network card instead.

The graphics card is virtualized in VM hosts such as VirtualBox and VMWare and for some reason they do not support WSVGA mode (1024x600).

I use VMWare Fusion on an iMac and the whilst VMWare Tools installs a Windows driver that supports 1280x800 mode (WXGA), it doesn't support 1024x600 mode.

VirtualBox 2.1 on the iMac is the same.

vmware 6.5 workstation allows you to set any resolution you want. It also has a cool feature called unity.
